Salted Apple Fudge is precisely what you expect from this name but in liquid form and served in a glass. Of course, it is an alcoholic. I love experimenting and finding a way to recreate some of my favourite food in liquid forms integrated into a cocktail. Mixology is a great creative process and gives us the bartenders extensive options to create new and well-known flavours served as cocktails.

So, where to start. First, this cocktail is an absolute delight. Not only because I made my apple fudge juice for it but mixing the apple, fudge, salt and using the premium Ketel One vodka as a base is magical.
Working on this cocktail was such a pleasure but also a lot of waste and mistakes. I’ve never bought so many apples in my life ?. But as you know, to succeed in something, you must fail a few times.
After trying different methods of making my juice (including baking, soaking, boiling etc.) I finally nail the perfect juice. However, this is for another time and another signature cocktail of mine.
With all trials of making the juice I wanted, this one is second best, so I decide to make the Salted Apple Fudge Cocktail. As you can guess, there is a fresh Bramley apple, fudge candies and no added sugar. Instead, I used Xylitol Powder instead of sugar. Much healthier with 40% fewer calories than sugar and safe for people with diabetes.
How to make the juice, syrup and salt solution:
For the Caramel Syrup:
- Caramel made from 150 grams of golden caster sugar. Soon caramel is ready, pour whole-fat milk. The hot caramel will curdle the milk and start the clarifying process. Leave it to rest for 30 minutes and filtrate a few times using Nut Milk Bag or fine Cheesecloth.
For the Apple Juice:
- Peel and cut three Bramley Apples in cubes. Boil 250ml of water and 500ml Red Bank Apple Cider. Reduce to 500ml and take away from heat. Add salted caramel fudge you can buy from any grocery store and mix till dissolved. Using fine sift over clean container start pouring the liquid with dissolved apples and salted fudge and press with a spoon to help the apple pure to go through. Finally, add 50grams of Xylitol for sweetness but without actually adding a real sugar.
For Salt Solution:
- 100ml Spring Water
- 25grams Kosher Salt
